Ultimate Umami Brussel Sprouts

Ingredients
  • 550 grams quartered brussels sprouts (about 18 sprouts)
  • 2 tablespoons light soy sauce
  • 4 tablespoons olive oil
  • 70 grams prosciutto (about 4 slices)
  • 10 grams parmigiano reggiano (shaved)
  • 1/2 tablespoon pumpkin seeds
  • 4 tablespoons maple syrup (dark)
  • 2 tablespoons parsley chopped (optional)
  • 1/8 teaspoon kosher salt
  • 1 teaspoon brown sugar
  • 1/4 teaspoon crushed black pepper
Instructions
  1. Add olive oil to pan and fry prosciutto over medium-high heat 2 min per side or until crispy.  

  2. Remove prosciutto from pan and add brussels sprouts flat side down. Cook for 5 min. 

  3. Flip the brussels sprouts, add salt and pepper. Cook another 4 min.
  4. Add soy sauce, reduce heat to med-low and cook another 1 min. 

  5. Add maple syrup and cook another 2 min.

  6. Add brown sugar and mix. 

  7. Chop fried prosciutto and mix into brussels sprouts.  

  8. Garnish with shaved parmigiano reggiano, pumpkin seeds, and parsley.
