Spicy Garlic Mayo

I love garlic (Robbie) and fell in love with spicy garlic mayo the first time I tried it in a restaurant. This is my take on the trendy condiment. The ingredient amounts listed in this recipe are to my personal taste, but you can adjust them as you like. One thing I'd like to point out is that the variety of mayo matters a lot. I've found that Kewpie mayo is superior for this recipe. This is because it because it has it has additional creaminess compared to the normal variety you find in stores. It's a little bit more pricey, but I think its worth it, especially for a sauce where mayo is meant to be the star.

One more thing worth mentioning is that using fresh garlic is important. This garlic may is "spicy" not only due to the red chili, but also due to zip from the fresh garlic. If you use garlic powder, I've found it doesn't taste nearly as "garlicky" and you won't achieve the same flavour as you find in restaurants.
